Chicken Cury

Ingredients

  • 3 tsp oil
  • 1/4 tsp fennel seeds
  • 3 cloves
  • 1 cardamom
  • Chopped onions (lets say half an onion finely diced)
  • 2 medium tomatoes, diced
  • 2 tsp curry powder
  • 1/2 tsp chili powder
  • Chicken (probably a pound for this recipe), diced thigh might be good
  • Heavy cream or coconut milk till desired consistency

Method

  1. Heat about 2 to 3 tsp oil in a pan, add(optional if you don’t have don’t worry, it’s for flavor) 1/4 tsp fennel seeds, 3 cloves and a cardamom
  2. Once the oil is hot, add chopped onions, saute with some salt, once translucent, add 2 medium sized chopped tomatoes
  3. After cooking add 2 tsp curry powder, (if you want spicy you can add a green chili or 1/2 tsp chilli powder, )
  4. Once the oil separate from the masala, add the chicken pieces and cook with the masala in the medium heat, add little bit of water if needed, cook it for few minutes
  5. Once it’s done, simmer the stove and add a tsp of crème or coconut milk, mix well and stop the stove
  6. Leave it for 2 to 3 minutes before serving
