Fried Udon Noodles

Ingredients (for 3-4 servings)

  • Udon Noodles – 1 lb. (or 2 packets with powder ingredient packets included)
  • Garlic – 2 cloves (chopped/sliced thinly)
  • Scallion – 2 roots (cut ½ inch sizes)
  • Ginger/Garlic Paste – ½ teaspoon
  • Chili paste/Sambal – 1 teaspoon
  • Soy sauce – 4 to 5 teaspoons
  • Sesame Oil – 1 tablespoon
  • Olive Oil – 3 tablespoons
  • Salt – ½ teaspoon or 1 teaspoon if powder ingredient packets not included with Udon noodles
  • Fried Shallots for garnishing (You can also mix while cooking other ingredients)
  • Firm tofu – ½ Lb. (microwave for 3-4 minutes before cutting into pieces)
  • Spiced tofu – 3.5 ounces
  • Mock Duck or Mock Abalone – 1 can (Substitute with shrimp or chicken)
  • Shitake Mushroom Sliced– ½ cup
  • Baby Bella Mushroom Sliced– ½ cup
  • Edamame Peeled – ¼ cup
  • Bok Choy Chopped – ½ cup
  • Bean Sprouts – ½ cup
  • Vegetables (Red, Yellow & Orange peppers, Broccoli, Carrots, Green Beans, Peapods, Squash, or Zucchini, pick what you like) – 1 cup
  • Tomatoes (Cut to about 8 pieces) – 1

Method

  1. Heat a pan or Wok
  2. Add Olive and Sesame oil when pan is warm
  3. Add minced garlic and scallions and sauté until garlic is slightly brown, then add ginger/garlic paste, chili paste, salt, and Bok choy. Add powder ingredient packets if available. Stir and Cook for few minutes.
  4. Add edamame, mushrooms, and vegetables. Stir and Cook for few minutes. If adding meat, add them during step 3 and cook a little longer until meat is tender.
  5. Add tofu and mock duck, cook for few minutes
  6. Add Udon noodles and pour soy sauce, cook for few minutes. You can also add rice vinegar and oyster sauce for taste. When noodle is cooked, add fried shallot, bean sprouts and tomatoes, stir, and serve while hot.
